I feel like chicken tonight..

So D has been very I’ll and so I thought I’d cook up something choc full of vegetables. Here’s a look at tonight’s two course  meal.

The main meal was a delicious Chicken Chowder (so titled by D).
250g diced chicken
Cream of onion soup (small can)
Handful of diced zucchini
Handful of finely chopped carrot
Handful of cauliflower
Handful of broccoli
1 teaspoon curry powder
Shredded cheese

Combine soup, curry powder and vegetables in a bowl. Mix well.
Brown chicken in a frypan and then add to vegetables etc. Mix well.
Place the mixture into a small casserole dish and sprinkle with cheese.
Bake uncovered at 180C for approximately 45 mins.

This was followed by a ‘George’ Nespresso coffee (for me) and rustic lemon slice for dessert.

1/2 pack digestive/Marie/arrowroot biscuits finely chopped
125g butter
1/2 can condensed milk
1/2 cup coconut
1/teaspoon lemon rind
* Add lemon juice to a standard icing sugar mix when frosting the slice.

Using a saucepan heat condensed milk and butter.
Add lemon rind, coconut and biscuits. Mix well.
Grease a baking tray and line the bottom with the biscuit mixture. Refrigerate for an hour.
Cover with icing and serve.
